Spier Cabernet Sauvignon, Merlot, Shiraz 2019 From The Signature Series, Perfectly Paired With A Dish Of Smoked Meat

Johan Jordaan, has used grapes from the Swartland, Paarl and Breedekloof Wine Appellations. This allows him the opportunity to put together the different styles of wine produced from these regions to create one harmonious whole, the sum of which is greater than the parts.  The vines vary in age from 7 to 20 years. The individual varieties, 45% Cabernet Sauvignon, 40% Merlot, and 15% Shiraz, were separately vinified. Once fermented 20% of the wine was matured for 18 months in French Oak Barrels while the balance matured on French Oak Staves in stainless steel tanks. After this the wines were blended and prepared for bottling.

From a Bordeaux shaped bottle, closed with a screw cap. The label is simple, elegant and descriptive. In the glass, the wine is a deep opaque blue plum in colour. The aromas are taken from the three grape varieties. Blackcurrant from the Cabernet Sauvignon, plums and raspberry from the Merlot, and blackberries and a grind of black pepper from the Shiraz. The oak and its concomitant spice and vanilla support the fruit in this medium bodied wine. Lovely palate balance and velvet glove tannins in the long aftertaste.
