As the winter chill sets in, prompting thicker coats and earlier nights, Spier introduces a cosy antidote to the cold. From 1 May to 30 September 2024, visitors can indulge in the new ‘Seasonal Sips & Soups’ Tasting. This seasonal offering pairs four of Spier’s award-winning wines with four comforting dishes, designed to warm guests from within. This tasting celebrates the transition in seasons, making it a perfect escape from the cold.
ABOUT THE TASTING
The new tasting features a delightful journey through four curated pairings, starting with a creamy pea velouté. This silky smooth pea soup, topped with whipped goat cheese and a crispy parmesan tuile, pairs perfectly with Spier’s Good Natured Sauvignon Blanc. This organic wine reflects Spier’s dedication to regenerative and socially conscious business. Guests will then savour the earthy forest mushroom consommé, a rich, flavourful broth brimming with sautéed forest mushrooms and a subtle touch of truffle espuma, complemented beautifully by Spier’s 21 Gables Chenin Blanc. This pairing enhances the earthy depths of both the soup and the wine. The journey continues with a decadent Stilton velouté, a creamy cauliflower soup infused with Stilton Blue cheese, served with a sable biscuit topped with fresh garden herbs and tangy pickled onion. It is expertly complemented by Spier’s Seaward Chardonnay, which highlights the dish with its creamy texture and vibrant acidity. For a sweet send-off, the tasting concludes with a rich chocolate tart, a delicious dessert combining intense dark chocolate flavours with a sprinkle of Maldon sea salt, served with Spier’s award-winning First Stone Organic Red.
